@noah-fence , It has everything to do with “German” … Sam German that is. In 1852 he created a mild dark baking chocolate for the “Baker’s Chocolate Company”. The company named the chocolate per his name in honor of the creator. Then on June 13, 1957 Mrs. George Calay published a recipe for German Chocolate Cake which uses this type of chocolate.
